Reports to: Principal, Gateway School & Nutrition Services Director

Pay Range: CH 10 $21.30 – $23.76

SUMMARY: Operating under the general supervision of the Gateway Principal and this position is guided by the components of the Mesa County Health department guidelines, and District nutrition policies.  This position supports the culinary and nutrition services needs of the Outdoor Wilderness Laboratory (OWL) Program for participants, staff, and volunteers.   Meals are produced from scratch for up to 60 students served in family style at the OWL Camp site and Gateway School kitchen/cafeteria with additional duties to include two snacks for full day programming.  This employee conducts meal planning, then prepares and serves breakfast and lunch and dinner Monday – Friday for each week of student programming. While this role works closely with the Nutrition Services warehouse ordering  supplies, produce, and arranging for deliveries; this employee spends a significant amount of time working alone and/or with limited  assistance. The position includes a split shift during the day and a living quarters during the week.

Job Task Descriptions 1. Implements & oversees the daily kitchen operations for the Outdoor Wilderness Laboratory located at our Gateway School. Duties include but are not limited to the production and serving of meals, complying with correct portion sizes, required items and quantity per established nutrition services recipes and District policies. This position also prepares up to two snacks per day following student participation schedules. This employee requires highly skilled culinary abilities, cooking daily from scratch to provide well-balanced, nutritious, and tasteful meals to students, staff, and volunteers. 2. Participates in and oversees the scratch meal production of all meals for OWL students, staff and volunteers ensuring accurate use of the OWL program’s official recipe & production records daily updates for their school. Employees must maintain organized production records. 3. Performs all daily cleaning tasks including, but not limited to; dishwashing, sanitizing all food contact surfaces used for preparation, cleaning all non-food contact surfaces such as floors,  shelving, walls, windows, kitchen restroom facilities, laundering of linens, towels etc. This person ensures the health and safety of everyone they serve through compliance with all District, City of Grand Junction, Mesa County, state and federal laws, statutes and guidelines. Responsible for student involvement in the Kitchen, including coaching and necessary training. 4. Prepares weekly food orders while ensuring First-In, First-Out (FIFO) and inventory turnover standards are met. Due to the geographical location of the camp the Chef will work directly with SYSCO food services NS warehouse, and other approved vendors and staff in scheduling orders and deliveries. Employee is responsible for maintaining food costs within budgeted parameters for the OWL Program.  Results and cost fluctuations beyond acceptable levels are investigated for resolution. 5. EDUCATION AND RELATED WORK EXPERIENCE:

High school diploma or equivalent required (Acceptable equivalent will be at the sole discretion of the District)
Minimum two years prior food service experience; preference given for prior culinary supervisory experience and/or school  nutrition services experience
Mesa County Food Handlers Card required within 30 days of hire
State Food Safety or other comparable manager certification required within 6 months of hire date
LICENSES, REGISTRATIONS or CERTIFICATIONS:

Criminal background check required for hire,
Lift test of 50# required at time of hire with recertification every three years,
Valid Colorado Driver’s License required,
Attend and successfully complete all staff development training as required by state law or as directed by the Director of  Nutrition Services
TECHNICAL SKILLS, KNOWLEDGE & ABILITIES:

Exceptional oral communication skills in English; preference for bi-lingual Spanish oral communication skills;
Strong ability to work independently as needed with minimal direction and/or supervision;
Basic professional written communication skills;
Ability to maintain confidentiality in all aspects of the job; especially related to student issues;
Ability and desire to conduct as needed culinary training for OWL Program staff especially in the serving of evening meals;
Ability to manage multiple priorities and frequent interruptions in a timely manner;
Ability to be adaptable and flexible with critical thinking and problem solving capabilities;
Well-developed ability to promote and follow Board of Education policies, building and department procedures;
Ability to follow and comply with the current Colorado Department of Education and District policies and guidelines regarding  food preparation, delivery, and storage;
Ability to communicate, interact and work effectively and cooperatively with people from diverse ethnic and educational backgrounds;
Ability to recognize the importance of safety in the workplace, follow safety rules, practice safe work habits, utilize appropriate  safety equipment and report unsafe conditions to the appropriate administrator;
Knowledge and enforcement of District rules and regulations is required to protect District people and property and to prevent safety concerns before they happen.
MATERIALS AND EQUIPMENT OPERATING KNOWLEDGE:

Operating knowledge of and experience with institutional food service equipment; ovens, warmers, mixers, steamers, kettles,  meat slicers, food processors, sectionalizes, and immersion blenders etc.;
Operating knowledge of and experience with personal computers and peripherals;
Operating knowledge of and experience with office software such as word processing and spreadsheets, email;
Operating knowledge of and experience with typical office equipment, such as telephones, copier, fax machines, etc.
